A 33x20cm hangiri with a lid is a traditional, handcrafted Japanese cypress wood tub used for mixing and cooling sushi rice, which absorbs excess moisture, prevents sogginess, and helps achieve the ideal sticky, fluffy texture. The wood expands when wet to tighten the copper bands holding it together. The large, flat surface allows for even seasoning and cooling, while the included lid keeps the rice fresh.
